They're back!
The warm, balmy weather, especially overnight has come with ant activity and with that, and after about two years, beefsteak mushrooms or amaKhowe.
It seems that the snails love them as much as we do, so none of them is a perfect specimen. Regardless, the flavours are, well, magnificent and perfect with pasta and with a salad antipasti festooned with lemon balm (melissa) and wild rocket (arugula).
Of course, last night was pasta night. It's been a while because we were entertained and entertained last week and the menu was their choice.
I do admit that I missed my pasta fix and considered rearranging the menu, but life just got ahead of me and it was easier - and simpler - just to stick to the plan. That made the wait worth every minute and every morsel all the more delicious.
The flavour of these mushrooms just cannot be described. The Husband was somewhere else in the house and his nose brought him to the kitchen.
They smell divine...
Happily there is some of that mixture left. I'm cogitating on its future and shall, no doubt, report back.

I have never heard of these before. I can't stand not knowing what they taste like. I'll ask my mushroom vendor if they have them. The pasta looks like it should be my dinner after a night at work. 😋
Thank you, Carolyn. I am not sure they are commercially available. Even here where they grown naturally. I did some homework (https://fionasfavourites.net/fabulous-fungi/) and they need the termites and are very, very shortlived when they do appear. The flavour: a bit like portabellini on steroids.
We are so lucky that they grow in our garden. When the conditions are right.

We sometimes see mushrooms like these after a storm on our one banks where I know there are massive termite nests deep underground (saw it when we dug into the bank on the other side when building a retaining wall. My previous old helper used to pick it and take it home but I'm still afraid to eat them.
I just finished reading your fascinating blog on mushrooms. I'll be so tempted, will pluck them from the ground next time and take pics.
