Plan B
Monday 's meatless meal was not what I had planned. I'm a bit late with it because a) I'm really busy (and goalposts keep shifting), b) I focused on my HivePUD delegations on Monday.
The meal was intended to have been my famous lentil and butternut salad. It included some of the same ingredients, but instead of being (in) north Africa(n), I moved continents and did my version of a Southern American style jambalaya.
Oh, and as I was doing so, I was thinking of @carolynstahl and her tomato risotto. I contemplated making a risotto but decided against it: I had to use up the brown lentils - they had thawed. I also had some steamed broccoli left from another meal.
I enjoy the combination of French herbs (I use a local version of the tradtional Herbes de Provence) and chilli.
Combined with come fresh, sweet peppers and fresh marjoram, this is a completely different meal.
Oh, and the other reason for doing this particular cooking method is because I simply did not have the energy to stand and stir, and watch. So, into the wok, lentils, roasted butternut and broccoli - with the par cooked rice - the lid went on and watched the President tell the nation that the State of Disaster was being lifted.
And yes, the next evening we had a douple celebration.

sometimes the same thing happens to me as to you, I wake up on Mondays without much desire to cook. When I don't have meat I prepare salads, (I love salads). I would like to be part of the Hive blog publication month by @traciyork.
It was a little chilly for a salad. To join Traci's initiative, all you have to do, is post every day for the month of April. She hosts #HiveBloPoMo twice a year, so if you missed it for April, there is November 🙂
For me that would be a combination of all the greatest hits in veggie foods. Yum. More nourishing than risotto as fun as risotto can be haha.
