Monday - as normal as normal can be
I got a real kick out of looking back at yesterday and realising that it had been a "normal" Monday. For me, that means knuckling down and getting through the crud that has piled up since Thursday. When Monday arrives, I've not been at my desk since Thursday so there's a lot to do. It also comes with lots of interruptive activity in the house which can often makes me grumpy - especially before I break my fast - at lunch time.
Of course, it's not the working lunch I'm going to talk about, but rather, supper!
I have mentioned before that part of the thinking behind the choice of weekly meal #inthejar for the market, is influenced by my (personal - The Husband had no say in it) commitment to Meatfree Monday. As I'd not only made enough on Friday, but didn't sell all the jars, there was ample for last night's supper.
Homemade pita breads stuffed with roasted butternut and lentil salad, chopped lettuce and tzatziki.
It's the first time I have served this combination. It'll be happening again.
Post script: I am trying to participate in @traciyork's November #HiveBloPoMo. I emphasise trying because the last two months have been exactly that - trying.
