Meatfree Monday on a Tuesday

This week, we had our meat free Monday on Tuesday because we were out for dinner on Monday. Although our hosts know that I'm a proponent of Meat Free Monday, far be it from me to decline an invitation because they don't practise it is religiously as I do. Truth be told, she'd be doing it in a heartbeat but he's like The Husband: a dedicated carnivore. It's probably why we all get on so well!

As is so often the case, the hero of the meal came came out of the jar. Last week, when I did my market prep, I made enough as insurance - and to take to our hosts last evening. Because I just wanted to and hate going empty handed knew that the flavours would work with their delicious Turkish doners (kebabs). And it did.

I digress, as usual. I served Moroccan Lentil Salad with naan breads, lettuce and cucumber - the lettuce and fresh mint from a quick rush into the garden.

It's a busy week, and knowing that most of the heavy lifting for some meals is done, is an enormous help. The naan bread came out of the deep freeze and with a non-essential crumbling of feta topping the salad, and warmed naan, we were good to go.

Oh, and substitute or lose the dairy feta for a vegan meal.

A good end to a long, busy day, mostly glued to my desk.

I'm head-over-heels in love with Moroccan Lentil Salad. I mean, totally, completely in love. It's my new favorite food and I can't get enough of it!

I never thought I could love a salad so much, but this dish is just so darn tasty. It's got all the right ingredients - lentils, veggies, spices, and a delicious dressing. Plus, it's healthy and filling, so I can eat it for lunch or dinner and feel good about it.
