Dealing with (sourdough) discard and supper out of jars (again)

Last night's meat free supper came, as usual, out of jars. This carrot salad with tzatziki is one of our favourites. I usually serve it in pita, but because I had some sourdough starter to discard, I made naan flatbreads.

Even if I say so, myself, they were the best I have made since I started making them. Half the batch has gone into the deep freeze for another meal. If you want the recipe, and if you don't believe that my recipes start on scrappy bits of paper, scroll to the end.

if you don't believe that my recipes start on scrappy bits of paper

I believe they start in your head, then get a few trials and adjustments in the kitchen before you commit to paper :)

This recipe is definitely something I want to try, once I master the art of making a sourdough starter. No matter what I do, and how clean and disinfected the jar I try to make it in, it goes moldy after a couple of days. :( We do have problems with black mold in the bathroom, and bad ventilation everywhere so we have to keep windows open even during winter, maybe that's why. The landlord says it'll be fixed this coming autumn...

That's true for things other than baking and bread. For me, anyway. It's part of why The Husband encouraged me to start blogging: to write down and replicate the successes.

On the mould issue, you sent me down a rabbit hole and I found this which you might find interesting, if not useful. Nearly 3 years into my sourdough journey, I'm still learning!

Thank you for the link! And the link to fruit flies from that. Haha, I guess people would love my apartment - I buy a bunch of bananas with fruit flies included, get home, and the fruit flies drop dead in a couple of days without multiplying. There's something seriously wrong with this place!

You do know that vinegar is a good way of getting rid of mould - of all sorts? Add it to your cleaning water.

Yes, I knew that, and we often do scrub the bathroom walls with a dilution of white vinegar, but one week and the mould spots are back. Can't do floor-to-ceiling cleaning of the bathroom every day, but perhaps using a spray bottle with vinegar and water after every shower might do some good!

The Husband encouraged me to start blogging: to write down and replicate the successes.

I know that most people count doing it the exact same way next time as a success. I dated a chef for a while, and we had daily (friendly) arguments about it. Sure, for a restaurant it's important that a guest who liked the chicken soup gets the very same chicken soup next time. But for me, doing it different next time is the goal, while learning from previous failures and successes of course.

I don't think there's some ideal chicken soup which we all should strive to cook, so I try to NOT repeat. Some days I want tomato base, others I want chicken stock or coconut milk. Green chili or red. Mushrooms, corn, spinach... all are great, but none is the best. But since I seldom write down what I did put in a dish, I learn slowly, and probably do repeat a lot 😹

Hah, I'm rambling. Sorry. Past 1 am here and I did have a beer. Or maybe two.

I like and do both. I got serious about replicating the same meal when we were hosting paying diners for Sunday Suppers. Usually, those recipes were for a the vegetarian option... We don't do them anymore...

The dinners or the vegetarian option? I can understand the need for easy and replicable dishes when strangers/paying guests are involved. Your good reputation kind of hinges of being able to serve the same dish to any new guests who have heard of it from previous guests :)
