Fajita Fixing
We wrapped up the weekend with fajitas.
This time, I substituted my "original" tortilla recipe from the interweb with one from @steelthong who makes them regularly, and left this comment after I "cracked" up:
The ingredients are the same as mine, bar one: baking powder is an addition. The ratios are slightly different as is one element of the method: hot water instead of cold.
I did ramp up the quantities because I like to freeze the surplus. Also, this time, I decided to par cook them before storing them.
The fajitas
I have always enjoyed fajita and never really thought of making my own.
Rather silly since I now know that it's about the herbs and spices with the basic vegetables: capsicums and onion.
This chicken and capsicum filling is really a cheat make because I added the last of the roast chicken to the veggies which I seasoned with chilli, cumin and fresh oreganum from the garden.
Quick, easy and, if I say so myself, delicious for an early summer Sunday supper. With, of course, extra chilli for The Husband.
Thank you, Allan, for the tips. They worked! The absence of avo and cilantro is because the former are not in season here and the cilantro fell off the shopping list... Ahem, not really: the Mexican flavour was an afterthought and I simply worked with what was in the garden and pantry.

Oh my! @fionasfavourites ...your delish food made me hungry... time check : 17:25 here in Southern Spain. Looking at those fillings prompted my way to the kitchen and made me a sandwich...LOL!

There are parts of Mallorca that compare with the coastline of our Cape peninsula... i have an unrequited love for parts of that island... I hope one day to visit again. And see more of Spain.
Yeah, come when it is not hot around May or June. In Southern Spain , the temps could rise up to 44°C , I think the best time to come is before Summer. Summer can be very crowded along the beach.. In Sept and October, the weather is milder in its 20°C -25°C.
I would feel right at home! That's what our summers are like. I was in Mallorca in April and into May. The weather was lovely!
Haha, I'm rolling laughing! Glad you tried it. Anything Mexican or Southwest for food and I'm in - my very favorite. Avocados are out of season here now as well, just little ones and too expensive. I just planted a bunch of cilantro since we have a very mild winter here and I can grow it all the way to the end of May. I have a bunch of capsicums (bell peppers) including jalapenos, habanero, and serrano chilis that are all producing too. I was thinking about making a chili and lime jelly/marmalade with them using your recipe and see what happens!!!

Hahaha! I have to write up that lemonchilli recipe. I have changed certain things in my method and worked out how to get a better (as in better aesthetic) distribution of the chilli...
I shall definitely be trying other southern and Mexican fixin's in future...

The tortillas sounds so easy to make and your filling soooo delicious. Great idea for a weekend supper!
They are. And they freeze well if you don't eat them all in one sitting.
