How to cook Zershak Pilau with chicken, a delicious Iranian dish?
Zarshak pilaf with chicken is a traditional Iranian dish that is cooked at parties and weddings.
To cook this delicious dish, we need a few ingredients, which are:
- Rice
- Chicken
- barberry
- tomato paste
- an onion
- Saffron
- Sugar
- salt and pepper
We prepare rice in any way we like. We can cook it either as a cutlet or as a strainer, if we like, we can prepare it in a rice cooker.
We fry a little paste in oil in a pot. Since I used ready-made fried onions, I don't fry onions anymore, otherwise I would cut and fry an onion first, then add tomato paste. After the paste changes its color and is fried well, I add a glass of water and then put the chicken pieces in the pot and pour fried onions on it. I also sprinkle a little salt and turmeric on the chickens.
Let the chicken cook for about two hours on low heat.
At the end of cooking the chickens, we should prepare the barberry.
We wash the barberry well to clean its dust.
Pour a little oil in a small container and reduce the heat. Pour the washed barberry on the oil and stir quickly so that it does not burn. The oil should not be hot. We can use butter instead of oil. Pour a spoonful of sugar on the barberry until it is smooth. Pour melted saffron on the barberries and stir. We can also mix a few spoons of cooked rice with saffron to give it a nice color. I did not do this because I did not have saffron.
After cooking our food. First, we put the rice in a dish, then we pour rice mixed with saffron on it and pour barberry on it.
Put the chickens in a bowl and put the chicken broth next to it. This sauce is very delicious.
Now is the time to enjoy this delicious food with our loved ones.
To cook the chicken, we can season the chicken with sliced onion, salt, turmeric and saffron the night before, then cook it for 24 hours on low heat. This will make it much tastier. You can also use bell pepper to make it tastier, but I didn't use it because I didn't have it.
