Apple Cake With Walnuts
It's been ages since my last recipe post and I should not be baking in this heat, but I did it anyway. The reason is I had three apples, drying day by day as I had no desire to eat them. The truth is, I bought them a long time ago and to my surprise, were so hard, if I wouldn't know I'm eating apples, would have thought it's radish. So I left them on the shelf, till now.
A few days ago a video recipe came my way on YouTube and as much as I want to avoid temptation, I could not get this out of my head, so today I decided to try it out. The reference recipe is not mine, it can be found here.
The main reason I let myself be charmed by this video is the simplicity of the recipe. At first I wanted to make croissants but was too lazy to make a proper dough, so I went for this one as the mixer did the job for me.
Ingredients:
- 3 eggs,
- 75g sugar,
- 150g all purpose flour,
- 10g baking powder,
- 100g melted butter,
- 3 tbs sugar for the apples,
- 1 tsp cinnamon.

The original recipe doesn't have walnuts, just cinnamon, but I wanted to boost it as I think it goes well with apples.
Method
As I mentioned above, the method is very simple and the mixer will do the job for you.
Put the eggs in a mixing bowl, add sugar and mix till it's foamy. Add the baking powder to the flour, mix and sift the flour into the egg sugar mix. Mix till you get a homogenized mix.
Wash and peal the apples, cut out the middle, then slice.
I used a cake pan and placed baking sheet to the bottom as I don't like it when the cake sticks to the bottom. After that, I buttered the edges.
Place the apples on the bottom of the cake pan, spread evenly. Sprinkle with 3 tbs sugar and 1 tsp cinnamon, then spread the walnuts as well.
Spread the flour mix on top.
Heat the oven to 180°C and bake for 35 minutes.
The beauty of this cake is that it's upside down, meaning once is ready, you have to turn it upside down.
And voilà, here's the masterpiece! The top is dark at some places due to the cinnamon, that may look strange, but trust me it tastes heavenly good, so worth the visual inconvenience caused by the cinnamon.
The best thing about the cake is that you need just a few ingredients, it's ready in no time and it's not so sweat. I'm going to keep the recipe and repeat it as it's worth it.
Last but not least, I always prefer home baked sweets because that way I know what I am eating. My goal is to eat healthy and even though this is sweet and has some calories, at least I know what goes in it.

Gorgeous. Apples and walnuts go so well together. I hate cinnamon and bought apple pies and cakes always have it. Id prefer 'just' apples but wouldnt turn my nose up at a few crushed walnuts sprinkled in :-)
Cinnamon is optional. Sometimes it is coupled with apple and usually used for the winter holidays, but it's not a must. So I can bake you one without cinnamon 😃
