Preparation method.

  1. Bring an oven dish or any individual dishes suitable for the oven.
  2. Put the beans in a wide dish and wash them well, then leave them to soak in water overnight.
  3. Put the beans with a little bicarbonate of soda in a saucepan over medium heat until they are tender.
  4. Heat the oil in a separate pan, then add the meat and stir constantly with a wooden spoon until it changes color.
  5. Add onions and garlic and stir for a little while, then add tomatoes.
  6. Add bay leaf, salt, and pepper and stir well.
  7. Add broth and tomato juice, and stir to mix well.
  8. Reduce the heat, cover the pot, and let the meat cook until it is tender.
  9. Pour the meat mixture into the tagine, then add the boiled beans. Arrange the rusks and cheese on top of the casserole.
  10. Put the casserole in the oven for ten minutes until it turns golden brown.
