Let's make Banana Pancakes!! , the Leftover Banana Dilema

I needed something nutritious nd definitely good tasting, and bonus points if it wasn't too much trouble. I am all about the fast and easy. If I am doing breakfast on the run, or just for fun, what could be better when you want to keep it simple and make breakfast for one. Or three or ten. There is no limit to how many, you can cook them 'til you're done. Or run out of bananas.

Banana Pancakes

Ingredients

1 banana (soft and turning brownish works best)
2 eggs

Optional

flour (makes the pancakes more fluffy and gives more texture/deeper flavor)
Honey/Sugar (if you like extra sweetness)
Nuts/chocolate chips/etc (just like adding extras to pancakes)

Toppings/extras

Maple Syrup, butter, fruit jam, salt, etc.

Instructions:

Mash 1 softened banana in a bowl, then mix in 2 eggs. I used a hand mixer, but a fork or spoon could also be used.

At this point, they can be cooked like a well-done pancake (the banana makes it cook slower than normal), or you can mix in a few spoonfuls of flour. You can also mix in honey or sugar if desired.

Add a portion to your pan/griddle and top with nuts/honey/etc. If cooking in a small griddle like me, you may need to flip the cake over to fully cook.Or you can opt for a full-size pan and make several at the same time. I was experimenting with amounts, so cooking one at a time worked for me.

I added a few chocolate chips to this one. I am not a fan of chocolate chips in my breakfast food, but, my assistant wanted them. I am accomodating and I give in to her. You can see the pancake griddle is just the size of one fluffy pancake. It was a decent size.

Notes: To be honest, this first one was a little overdone. It's okay, the next few came out great. It is mere minutes to go from ingredients to table. A fast and easy little recipe.

These pancakes are denser than normal pancakes, so don't overdo the flour or they turn into golden brown hockey pucks. While I called these pancakes, you may be disappointed in the flavor if you are expecting them to taste like full fledged IHOP pancakes. These are called pancakes, but are more nutritious. I had to adjust my expectations accordingly. Delicious!

The first pancake (on the right) was coooked too long, was drier and not fluffy. The second one, I added one tablespoon of flour to the batter left. The third one had two tablesoons added to the leftover batter and the fourth had three tablespoons added. In my opinion, the one that came out best was the third pancake.

Some days, I need something that is good for me and can be done in a flash. This recipes quite do the trick and I get to use mu my overripe bananas. Win-Win! And just like that, this post is over! Come back tomorrow and we will do it again!

Looks fairly easy and delicious, especially the one with chocolate chips lol.

Pancakes are like crepes and they say that the first crepe is always for the birds. You use the first one to test the temperature and timing and make all your mistakes on.

Ha! Yes! Can't you tell? I even showed it off. :)) It is a good point that I should have mentioned, but didn't, so I am glad you did. It does make good sense to waste only one.

Everyone wants chocolate chips! :)) I have never had them, not even wanted them, but my kids all love them. I go with the feeling. I am pretty sure it would taste like dessert then. I always have a banana that falls behind and needs to be used for something.

Oh! Yummy. What a good idea! I am going to try this recipe in a few days. Just have to get some ripe bananas. I am going to make it the size of a pizza! Then cut it into smaller pieces!! So lazy! 😂

I love bananas. When I first saw it I wondered what would go on it. Somehow, maple syrup didn't sound right from over here, but you never know till you try it... .right?

No chocolate chips for me please. There are people it seems, that think they make everything better, but not me. To each their own of course. 🙂

Thank you. Once in a while, I get lucky as the normal for me is to miss nature shots. I swear to God!

I don't like the maple syrup, but, one of my kids does. So I tossed it in. Haha ditto with the chocolate chips. I said that down in a comment earlier. All of my family likes it, but, it is a no go for me. I have never like them in all the different things people put them in, except cookies. Tollhouse Cookies with nuts in them too. Then, there is forgiveness.

I actually like a scattering of berries on top, especially if I have but a little sugar in them and they have some syrup to spare. :)

I have to agree that the chocolate chips in Tollhouse cookies are the bomb.... but that is nearly it. We use to have a 60s recipe call Hello Dolly which was a layered bar type cookie and it included chocolate chips and maybe butterscotch ones too. Those were pretty good and RICH ! yum yum !

I like maple syrup on rare occasion. Even though I am a sugar addict from birth, that is nearly too sweet for even me. Love other maple flavored things though, like homemade maple cremes..... yum yum... again

My day has been full of crappy phone calls from the idiots that use our company. LOL Shhhhhh .... don't tell I said that ! It's been hectic, but thankfully almost over. I just got off an hour and a half phone call so my last break was only 45 minutes before quitting time. Skip it because it's so close? Not on your life ! ha ha

Sounds like a plan! I get to that point where I don't make something that I like and there is no rhyme or reason, it just slips my mind and there are other things that taste good. Then I see a picture of something and boom! I need it.

Those look like they turned out really nice! I like fresh bananas, but I can't stand banana flavored stuff, even if fresh bananas were used in the making of it. So things like banana bread is a hard pass for me. I'm glad you enjoyed them. They look great! I like your little maker!

Wait! Everyone loves banana bread! :)

I like it because I can small batch it with the little pancake maker or put it on the griddle for more than one or two. The little pancake maker was gotten for the kids for the college dorm, but they would bring it back and put all of them in the kitchen space every year. All three of them. So if there is only one eating or if I am alone (never!) I pull it out and use it.

I actually am, but, it was one person and the pancake maker can be fun. The pancake doneness preferred is lighter for me also, but, the banana is what makes it darker looking. The first one was absolute toast! It was the test pancake and everything was tested on it.

Hindsight, it would have looked better if I used a griddle, but, you know how cooking posts are not my normal thing, so I am flying by the seat of my pants here.

Haha! I loved the hockey pucks comparison, it reminded me of the many mistakes I've made in the kitchen.
I like what you've done, I've never tried that combination. It's very easy to make and we need to try that too.

I can see you are busy, Pryde (did you know Pryde has ancestors from Romania?) is busy and I am not feeling well either...

She is always busy too. My busy is an okay busy, I don't let myself get overwhelmed with busy anymore. There is no reason to. So, I am busy, but, I do get some downtime as well. Although my downtime is not spent here, my family would disown me if I choose Hive over them! :)

The combination was unexpected but we had a banana that needed to be used for something. I truly dislike throwing food away, in fact, I rarely do. The ingredients need to be played with to adjust to every person's taste, especially texture. I am not overly sensitive about textures, but, many people are.

I'm sorry for creating this misunderstanding. It was kind of an adaptation of a joke you don't know and then you understood that I was saying I was sick. That joke was about the way some people evaluate themselves, and think they are important people. The joke goes like this: some friends are talking and one says...

I hope I remember correctly. Our friend @old-guy-photos introduced Pryde here and I think in my discussions with her then she said she has ancestors in Romania, not that she is Romanian. Probably a certain percentage may be Romanian. I hope I am not mistaken, and if I am, I apologize.

I also noticed that you are less active, posting three days apart. I suspected you were busy with something else, at one point it was about some work in the garden next door.
I'm a bit demotivated and my desire to post has decreased. It has nothing to do with the drop in Hive value. I think I get tired quicker, in the evenings I have no output and if I don't finish writing by about 8 pm I abandon posting.

I usually do pancakes when I have guests,
but I used the mix... just add water, hehehe!

The mix is easier, but as you buy organic and healthy, I say, give these a try! The banana and egg mixture is different, but, when do you have a leftover banana? It is the way I use them up or banana bread!

Im sure they had a great tasty flavor. I love banana ( my favorite fruit); BTW, bananas sold here in the US ( as well as avocados) are really , really good . I always used my bananas when they get brown. I mostly use them in smoothies.

I m not a big fan of making pancakes. They never taste as good as the one you buy in dinners or restaurants. ( the same happens with hamburgers and Hot dogs) I know that the ones we make at home are healthier, but they are never tastier.
