Today I would like to share with you a recipe that I have loved to prepare: courgette, carrot and candied fruit cake. We often associate courgette with savoury preparations, such as casseroles or salads, but the truth is that it can also be a star ingredient in sweet recipes. On this occasion, I decided to use it in a cake, and I must say that the result was surprisingly delicious.

The idea for this cake came last week, when my dear friend Migdalis turned 70. She is a woman with admirable energy and vitality, and she wanted to celebrate her birthday with something special. I told her I would make her a cake for the occasion, and her only request was that it be healthy. ‘I want something that takes care of me, my friend,’ she said, and that inspired me to create a recipe that combined the best of both worlds: taste and wellness.

Hoy quiero compartir con ustedes una receta que me ha encantado preparar: torta de calabacín, zanahoria y frutas confitadas. A menudo asociamos el calabacín con preparaciones saladas, como guisos o ensaladas, pero lo cierto es que también puede ser un ingrediente estrella en recetas dulces. En esta ocasión, me animé a usarlo en una torta, y debo decir que el resultado fue sorprendentemente delicioso.

La idea de preparar esta torta surgió la semana pasada, cuando mi querida amiga Migdalis cumplió 70 años. Ella es una mujer con una energía y vitalidad admirable, y quería celebrar su cumpleaños con algo especial. Le comenté que le haría una torta para la ocasión, y su única petición fue que fuera saludable. "Quiero algo que me cuide, amiga", me dijo, y eso me inspiró a crear una receta que combinara lo mejor de ambos mundos: sabor y bienestar.
