CREATIVE SUNDAY//BANGA RICE/BEANS WITH SAUCED CHICKEN
Happy sunday my fellow hivers, its another creative sunday and on todays episode I will be showing you how I made a very tasty banga rice and beans with sauced chicken, sit back and enjoy😊.
INGREDIENTS
• Banga (palm kernel fruit)
• Rice
• Honey beans
• Seasoning
• fresh peppers/Onions
• chicken
• potash (potassium)
• vegetable oil/ sachet tomatoes
• chicken seasoning powder
STEP 1
[Agric banga is actually the best for Banga rice , its has lots of fleshy part and really soft]
I bought half basket of banga, washed with salt and water to remove dirt and germs, then put them in a clean pot and boiled it, I boiled it till the fleshy part was tender, after that i filtered the water from the fruit and then put the fruit in a clean bucket, then i used a pestle to match it, you can use a bottle or anything that works for you.
STEP 2
After matching it, put some quantity of water inside and wash it to make a watery paste, you can repeat this process again to get your desired quantity. While doing this you can start boiling your rice. It can either be local rice or foreign rice but i used foreign rice for this recipe.
STEP 3
I parboiled my rice to half done, then i put in the filter to filter out the starch water, then i washed it to remove excess starch
After that, i put my rice in a bigger pot because i definitely knew what was coming Lol, anyways i needed the rice to be very soft because thats how banga is supposed to be.
STEP 4
After putting my rice in a bigger pot, i also added my watery paste, i added enough but not all of them because we are going to be needing it for later purpose. After that i added my blended pepper mix (fresh pepper and onions), then i also added my seasoning cubes and salt to taste.
I allowed it boil very well for some time, then i added more of the watery paste to the rice again, then added seasoning cube and salt to taste again, then I allowed it the water to dry up.
HOW I MADE MY BEANS
STEP 1
I used 2 cups of honey beans, i picked it and removed dirts and stones, I washed it and soaked for some minutes.
Then I put in a pot, I added sliced onions and potash as this would make it soft. When it became soft i remove it from the heat and filtered out the remaining water.
STEP 2
After filtering, I put the beans in a pot then also added the remaining Banga paste, pepper mix, then i added my seasoning cubes and salt and allowed it to boil till it was completely soft and the water was dried off.
CHICKEN SAUCE
STEP 1
I diced the chicken into smaller sizes, I washed them and placed them in small pot, then I added seasoning cubes, salt, chicken seasoning (Benny chicken powder), sliced onions and curry powder, and allowed it to simmer.
STEP 2
After the chicken has become tender, I removed it from heat and set aside, then i put an empty pot on the fire, I added a little amount of vegetable oil to the pot, put some slices of onions, allowed it fry for few seconds then I added a small amount of sachet tomatoes and I allowed it fry for some minutes, then i added my pepper mix, seasoning cubes, curry and salt, gave it a good mix and allow to fry for some minutes, finally I added my chicken and a little amount of chicken stock, and allowed it to cook for some minutes.
