KITCHEN TIME: PREPARING SUMPTUOUS FRIED RICE FOR LUNCH

Sunday meals should sometimes be special and different from every other day, not just because it's Sunday but also because it's a day that we have more time to spend in the kitchen, unlike every other day. So, yesterday I decided to prepare fried rice for lunch. I stopped by at the market to get some veggies, meat and other ingredients that I don't have at home.

Fried rice is a popular meal across Nigeria and it is often served alongside its counterpart, jollof rice at events or restaurants. There are many ways to prepare this meal and I have been able to master few of them, all thanks to Youtubers who take their time to share the videos. I just discovered that cooking fried rice with butter is more tasty and gives the meal a lovely look than when you use vegetable oil. Since then I have been stucked with it.

I'm a big fan of fresh vegetables, so I always take my time to go to the market and buy fresh ones each time I want to prepare fried rice or other meals that require. Even if you don't have the strength to go to the market or to slice these vegetables, be sure to at least get fresh carrots, green pepper and green pepper. They will give your meal a sweet taste and flavor. These are the major ingredients that I will use in my case but there are so many other ingredients that can be used which will depend on your budget. Some of them include prawns, liver, kidney, chicken, snail, etc.

INGREDIENTS

  • Rice
  • Butter
  • Onions
  • Red pepper, green pepper
  • Green peas
  • Carrots
  • Curry powder
  • Thyme
  • Seasoning cubes
  • Salt
  • Nutmeg

HOW TO PREPARE

  • Wash your veggies (onions, carrot, green peas, green pepper, red pepper) thoroughly under running water and be sure that it is clean

  • Chop into your desired size and set aside

  • Wash the rice properly and pour into a pot of boiling water. Season the rice with your ingredients like curry, thyme, nutmeg, meat stock and leave to cook on medium heat.

  • Allow to cook until its halfway done. Meanwhile, check for the water level at regular intervals to avoid burning

  • Switch the other burner on, place a frying pan on medium heat and add some butter.

  • Allow the butter to melt and add the sliced onions first, stir fry for about a minute, add the green pepper, then add your seasoning cube and stir all together

  • Add the carrots and stir fry for some minutes too

  • Then fry all together for another two minutes with constant frying and set aside

  • Now, let's pay attention to the rice... Divide your fried veggies into about three portion and also your rice as well.

  • Place your frying pan on medium heat and add some butter. Use each of these portions to fry the other until you have achieved your desired texture. Don't panic if it's getting a bit burnt, it's part of what gives this meal its unique taste.

  • Repeat this process and your meal is ready

@debbie-ese greetings to you, I love Nigerian fried rice so much tho it takes so much time to prepare it but it is healthy and nutritious, me sometime will over cook the rice and that always make my fried rice not come out good but I will try again, I enjoyed reading your post and I wish I can access the fried rice from my end.
