Vegetarian Spaghetti? very very tasty!

( EN / DE ) The secret of this dish is to cook the noodles together with the vegetables, which gives them an incredibly good taste.
Das Geheimnis dieses Gerichtes liegt darin, dass man die Nudeln mit dem Gemüse gemeinsam kocht, was ihnen einen unglaublich guten Geschmack verleiht.

This time I have chosen carrots and mild peppers, what I could find in the fridge, but you can cook them for example also with broccoli, hmmm, maybe I'll show that soon again. But now first today's recipe:
Ich habe hierzu nur Karotten und Paprika gewählt, was der Kühlschrank eben so hergab, man kann sie aber zum Beispiel auch mit Brokkoli kochen, hmmm, vielleicht zeige ich das demnächst auch noch mal. Nun aber erst das heutige Rezept:

Ingredients:
Vegetables for cooking peppers and carrots, majoram, salt
Spaghetti noodles
Olive oil, small tomatoes, fresh basil, oregano
Parmesan cheese

Zutaten:
Gemüse zum Kochen Paprika und Karotten, Majoran, Salz
Spaghetti Nudeln
Olivenöl, kleine Tomaten, frisches Basilikum, Oregano
Parmesan

Put the pot of water on to boil and cut the carrots and peppers into small pieces. Salt the water and season with a little marjoram, then add the vegetables. First put in the kind that should cook longer, here with me the carrots and only later peppers.
Topf mit Wasser aufstellen, bis es kocht die Karotten und Paprika klein schneiden. Wasser salzen und mit ein wenig Majoran würzen, dann das Gemüse hinein. Gebt zuerst die Sorte hinein, die länger kochen soll, hier bei mir die Karotten und erst später Paprika.

It's up to your taste how long you cook the vegetables, I like them to still be a bit crunchy, so rather short cooking time. Towards the end of the cooking time, add the pasta to the boiling vegetable water and cook (according to noodles package instructions).
Es bleibt eurem Geschmack überlassen, wie lange ihr das Gemüse kocht, ich mag es gerne, wenn es noch ein bisschen knackig ist, also eher kurze Kochzeit. Gegen Ende der Garzeit nun die Nudeln in das kochende Gemüsewasser geben und (je nach Nudel Packungs Anleitung) kochen lassen.

In the meantime, cut tomatoes and basil into small pieces, also the Parmesan cheese can be grated coarsely (or finely, who prefers it).
Inzwischen Tomaten und Basilikum klein schneiden, auch den Parmesan kann man schon mal grob reiben (oder fein, wer es lieber hat)

When the pasta is al dente, drain together with the vegetables in a colander.
Wenn die Nudeln al dente sind, gemeinsam mit dem Gemüse in einem Sieb abgießen.

I then simply take the pasta pot, rinse it briefly with water and use it again. Now olive oil is added to the pot, the tomatoes are sautéed briefly with basil and oregano.
Ich nehme dann einfach den Nudeltopf, spüle ihn kurz mit Wasser aus und verwende ihn noch einmal. Denn jetzt kommt Olivenöl in den Topf, die Tomaten werden mit Basilikum und Oregano kurz angebraten.

Then add the pasta/vegetable mixture, stir everything well, let it sit for a few minutes and it's ready to eat!
Danach die Nudel/Gemüse Mischung dazugeben, alles gut umrühren, für ein paar Minuten ziehen lassen und fertig ist es!

Arrange on plates, sprinkle with Parmesan cheese and garnish with a leaf of basil. Bon apetito!
Auf Teller anrichten, mit Parmesan bestreuen und einem Blättchen Basilikum garnieren. Bon apetito!

I did a recipe really close to yours some time ago,but without carrots, I like this kind of veg easy and cheap recipe.

I wasn't expecting to see anything new for me this morning, but here it is! I've always cooked the vegetables separately and mixed them with the pasta at the last stage... Gotta try a new recipe.

You never know where you learn something new ;-)
Its very yummi, the only point to consider ist, that while cooking the veggies they lost some vitamins to the water, wich otherwise would stay in the dish. But from time to time, I guess the great tast is worht is

Ooh, that's a good idea! I usually cook my pasta and vegs separately, and sometimes put a stock cube in the pasta water, but your way - letting the vegs flavour the pasta - sounds much better!

I love spaghetti with vegetables, but what a great idea to cook the vegetables along with the pasta. I'll try it soon :)
