Zucchini ketchup in Jars
A lot of rain, gives me giants of zucchini!
Sometime I miss checking a plant and then I am in shock how big it has grown – like the zucchini!
Haha Oeps, They are not tasty to eat in this way, but I can make other lovely foods of them.
This time I made zucchini ketchup!
Since I made those some years before I have many people who order jars of ketchup with me. So in this way the big zucchinis will be used well! Especially my mom begs me to make many for her, she uses them to make lovely spaghetti sauce together with my tomato sauce.
The biggest zucchini was already 1.5 kilos. These 3 big ones together are around 3kg.
So for 3 kg zucchini you need 1kg onions.
Cut them both in small pieces or grate them.
Or grate them direct in the pan.
All in the pan and cook it to reduce the water from the Zucchini and onions.
It takes some hours.
Other ingredients you need: (you can experiment yourself of course with other varieties)
100gr. Salt (I prefer Celtic sea salt)
600gr. Tomato puree
1 cup (150 gr. ) sugar
400ml white vinegar
4 teaspoons pepper powder
2 teaspoons cayenne pepper
Put all the ingredients in the pan and blend them to a smooth sauce
Make sure you have clean jars with good lids, so you can keep them on your shelves the whole winter long. I sterilize them by pouring boiling water on top of them or I have a pan with boiled water in it and put them for 1 min.
Put the sauce in the clean and sterilized jars
After closing the jars with the lids, turn them upside down and let them cool down.
In this way it creates a vacuum and has longer shelf life.
So I am 8 pots of ketchup sauce richer (officially 9.5 jars, but I gave already one to my neighbor, because the lid didn’t wanted to close well and the little left over I have for myself)
I love this receipt, my friend from Holland, who has also a garden shared it with me. In this way the big forgotten zucchinis get used well!
