Indonesia also known as the country with the food that has the flavour is incredible. Indonesian cuisine is a culinary tradition that is the most rich in the world. It is influenced by the diversity of tribes and nations that exist in Indonesia. Each ethnic in Indonesia, has a distinctive culinary and cultural identity generally. Almost all Indonesian dishes rich in various spices and seasonings such as chili pepper, turmeric, onion, galangal, ginger, kencur, coconut, kimiri etc., and also influenced a variety of cooking techniques from the nations foreign trade in Indonesia such as India, Arabic, China, or Europe. One of the culinary riches of Indonesia since the first is to manage the food material of vegetable or Plant Base. It is, perhaps because since the first poverty is still a social problem in Indonesia and to buy meat or animal protein sources, they have no money. One of the plant materials that are often used to be a delicious dish is Eggplant.
The eggplant is cooking ingredient that can be processed in various ways, ranging from pan-fried, deep fried or grilled. Eggplant has a delicate texture and a distinctive taste and delicious. The taste and texture of eggplant is similar to chicken meat, not infrequently many people cultivate the eggplant as a substitute alternative for processed meat. Recipe of Pecak Eggplant
Ingredients:
- 2 pcs Eggplant
- 65 ml coconut milk
- 4 pcs red Chili
- 2 cloves of garlic
- 3 cloves of shallots
- 2 pcs Candlenut
- 1 Turmeric
- Lemongrass
- Galangal
- Lime leaves
- Bay leaf
- Salt
- Sugar
How to cook pecak eggplant:
- Wash and clean the eggplant and then burned over the fire stove until cooked.
- As the eggplant that is cooked above plate
- Puree red chillies, tumeric, garlic, shallots and candlenut.
- Heat a little oil above the wok pan, fry the herbs that have been smoothed. Add galangal, bay leaves and lime leaves. Cook to bring out the aroma.
- Enter a little water and coconut milk, salt and sugar. The correction of taste.
- Pour the sauce Pecak above eggplants that have been burned.
- Pecak Eggplant ready to be served.

You must to try this recipe. I think oyster sauce can be change with balance between salt and sugar for umami taste :)

Funny you mentioned vegetarianism as a sign of poverty, true in Cambodia too. In the west though, farm subsidies and other laws make a vegetable and fruit rich diet more expensive than meat and dairy. This is just another reason I love living in Cambodia, because the fruit and vegetables are very affordable.
