Yummy vegetable soup prepared my me

Without wasting much of your time I will be showing you with details how vegetable soup is prepared in my comunity here are the recipe used.

Names of Items used

  • water leaf

  • (ugu) pumpkin leaf

  • fish

  • meat (beaf)

  • onions

  • Maggie

  • melon (egusi) optional

  • local Maggie (opehe)

  • red oil

  • stuck fish (oporoko)

  • pepper

  • First of all what we need to do is to per-boil our meat,fish and our stuck-fish (oporoko) for at least 20min to make it soft.
    The health benefit of this it is (proteinuos)

  • Then we cut our onion into tiny particles the health benefits for onion it contains antioxidant and compound the fight against triglycerides and reduce the risk of heart disease. It an amazing spice you will not want to stop eating

  • melon (egusi) as we can see in the picture it has already been blended this spice helps to thicken the soup and it has a great nutritional value
    It has be proven that melon seed (egusi) is very rich in vitamins it contains vitamin A B1 and vitamin B2 which helps in growth and also makes the bone stronger it also helps in the production of red blood cell not just that it also contain 35% protein.

  • we have our red oil gotten from palm tree it is the major or will i say the only oil used in preparing every kind of soup in Nigeria
    It has a very geart nutritional benefit it is 100% in fat and it also it also contains vitamin E, and also antioxidant called carotenoids which your body can convert to vitamin A.

  • water leave and (ugu) pumpkins leave this is the must important ingredient used in preparing vegetable soup in this part, east Nigeria and it also has a very important nutritional value which are known to be,alkaloids, resins, hydrocyanic acid, tannins, and flavonoids powerful antioxidant which helps our immune system.
    And anti-inflammatory benefit.

  • pepper this is a great spice that is used round the world and it also contain a very powerful health benefit. It is low in calories it also contain vitamin A and C potassium, folic acid and fibre e.t.c

Without wasting much of our time let me take you straight to the preparation process since we have our meat fish and oporoko boiled, we will put an empty pot on fire and add 25cl of oil to it allow it get hot that will take us 3min we add our onions to it after that we add our melon seed that's (egusi) then we fry it for another 2mins, then we add our washed vegetable I washed the vegetable with enough water and salt this is to prevent sand and germs. Then we turn it. Like this

After that we add our meat fish stock fish and the water we used to boil it and leave it for the next 5min to steam up
After 5min our vegetable soup is ready
