Start The Day With A Vegan Sandwich
How about a sandwich for breakfast? It is one of the ways to a good lifestyle, which we can live if we want to start to live healthier. There are tons of sandwich ideas that we can make at home.
Some of them with the simplest options. But many things will complicate us if we use unusual fillings. Well, I like about the extra work for my hands. I consider it a good exercise for moving my body in the morning. I need more movement of course.
I chose a sandwich recipe with several ingredients that I had to prepare first. I deliberately chose the sandwich variant to make me not lazy to move. While preparing the ingredients for the sandwich, I wish I could reactivate my brain from my sleep.
Well, I'm used to thinking about a lot of creative things while cooking. It helps me create many new creative ideas including new menu ideas that I will make for the next day.
So, what's for breakfast today? I chose several ingredients such as potatoes, carrots as well as Romaine Lettuce and avocado as a filling for the sandwich.
For basic sandwiches, I choose to use toast. You can use bread without roasting. That's okay. Just follow your tastebuds.
All We Need
- 100 grams of potatoes
- 100 grams of carrots
- an avocado
- green leaves
- lemon juice to taste
- to taste salt
- to taste pepper
For the sauce (optional)
- 2 tablespoons of peanut butter
- 2-3 tablespoons of olive oil
- (optional) chili powder
Cooking Instructions
What I like about preparing this sandwich is that I can do housework such as sweeping and washing dishes, while waiting for some of the ingredients to cook and be ready to be used to serve together.
Roast Bread
I use an air fryer to roast bread for 25 minutes. My air fryer has no temperature settings. So I just need to set the cooking time. You can use a toaster that you usually use at home.
Boil/Steam Veggies
I use carrots and potatoes. So I peel them first. Then, to make it easier to smooth them later, I cut them into small pieces. Then boil them until they become soft and ready to be mashed together. Don't forget to add a little salt to the water to boil.
By the way, you can also steam your choice of vegetables. It doesn't matter at all whether you choose to steam or boil the vegetables.
Making Sauce
Combine all the sauce ingredients in a bowl. Stir well until textured into a sauce that is ready to use.
Making Mashed Potato and Carrot
Drain the boiled carrots and potatoes. Then, puree them. I use a potato masher. After that, I mash them again using the bottom of the glass.
Making Mashed Avocado
Do the same with the avocado. Mash them using a fork. Add a little lemon juice, fine salt, and pepper.
SERVING
Prepare toast then spread with mashed avocado.
Add peanut sauce on top of the mashed avocado layer.
Followed by adding mashed potato and carrot.
Add vegetables and sauce on top before closing with a toast again.
Closes the sandwich with toast.
Split the sandwich into two parts to make it easier to enjoy.
The Results
The incomplete equipment this time made my sandwich look messy. This time I was dissatisfied with the shape of the sandwich. I don't have a supply of plastic wrap to make sandwiches neater and nicer.
But, what about the taste? Because I think the taste is good and quite good, I finally forgave the messy shape of the sandwich.
I also serve this vegan sandwich for my partner and my nephews. In the end, I'm so glad they liked my vegan variation of the sandwich. Even though it's only made from plant-based ingredients, they still like it.
Sometimes it's quite difficult to serve only plant-based ingredients without animal ingredients to people who are not used to them. However, now I am grateful. My family members can accept and like the food menus that I make. It can be seen that they have adapted well to my cooking results, which are mostly vegan food.
Is the sandwich variant what you like? Maybe you have a fav filling and sauce for you always use to fill your sandwiches to start the day. So, what is your favorite filling?

This sandwich looks delicious, but I have never tried to enjoy it, again and again it makes me curious about the taste, thank you very much sis for the recipe
In Indonesia, especially in traditional places, we rarely find this one because maybe some people didn't like less taste of this one. Indonesian like to eat strong food with gravy.
But you can try it for your breakfast 😊
Look so yummy sis, may i have some?
Sure! You can have one then 🥗🥗🥗
Thank you so much, plant power team 🍀🍀🍀🍀🍀

It's ultimately about the taste, but I get your point. It elevates the experience when it also looks nice.
Never thought of using mashed potatoes and/or carrots as a breakfast food. Thanks for the idea! 😊
Deliciously healthy and colorful. It's something to look forward to if it's served for breakfast. In our country, we prefer to have it for snacks or afternoon tea.
@anggreklestari This recipe looks very practical and delicious.
