Plant-Based Pumpkin Cakes

Sweet cakes for dessert to enjoy time with family.

The smell of pumpkin mixed with cinnamon. The warm smell coming from the oven. It's one of my favorite scents in my kitchen.

Starting from successfully making really good pumpkin pancakes, I also like to explore pumpkins. Since pumpkin here has no season and can be available at any time in the market.

When making pumpkin puree, we can also make a delicious pumpkin latte. So, we can make food and drinks at the same time from the pumpkin ingredient.

Like this time, I will share a recipe for pumpkin cake that is sweet and super moist. Even without eggs and milk, you can see for yourself the moist texture of these cakes. So, don't be afraid to try making plant-based cakes.




Making Pumpkin Puree First

Here, I use 1/2 kg of pumpkin. Then, cut into some pieces like in this picture to easier remove the skin later.

After removing the pumpkin skin, cut pumpkin into pieces or cubes. Wash clean, then put into steam container.

Steam the pumpkin pieces in the steamer tools for about 15 minutes. You can also bake the pumpkin to make pumpkin puree, or even boil them.

While hot, then let's make pumpkin puree using stainer. Then, just use 1/2 cup of pumpkin puree for this pumpkin cake recipe.

The Ingredients

Wet Ingredients

  • 1/2 cup of pumpkin puree
  • 2 teaspoons of vineger or lemon juice, I replace it with 1 teaspoon of cream of tartar
  • 1/3 cup of cooking oil
  • 1 cup of water

Dry Ingredients

  • 1 1/2 cups of all purpose flour
  • 1 cup of sugar, blended into powdered sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon cinnamon powder
  • 1/4 teaspoon salt



Cooking Instructions

Blend sugar into powdered. This way is to make it easier for the wet ingredients to mix evenly even if you don't use a mixer.

Prepare a large container. Then, mix all the dry ingredients using a whisk.

After finishing with the dry ingredients, add the wet ingredients, except cooking oil. Mix evenly using a whisk.

Add cooking oil then mix well again. Then prepare a baking container.

Line a baking container with baking paper or just use oil spray. Add the dough into baking container.

Before that, don't forget to preheat the oven. At a temperature of 180 degrees Celsius. Then, bake the dough for about 45 minutes, or just use a toothpick to test the doneness of the cake.

Remove from the oven once the pumpkin cakes are cooked. Cool to room temperature.

Oh, so beautiful! Cut the cake according to your taste after the cake has cooled.

Since these cakes are already sweet, I didn't add any more cream for serving ways. But you can also add icing cream if you want.

I serve these beautiful cakes with pumpkin latte. Oh how beautiful this cake is. Also, I feel this cake is really delicious and moist in the mouth.

Honestly, this is really addictive. Apart from banana cakes, these cakes can be a treat for the family. ❤️

Pumpkin cake is really good, and this one looks pretty great (and tasty). Here in Brazil it doesn't seem to be very popular, but I think the flavor is very specific.
