Now I Know How To Cook Green Tomatoes Deliciously
For me, the freshness of slightly sour vegetables will bring a unique sensation that is not boring in side dishes.
Hello, fresh green tomatoes. I was very happy to find green tomatoes at the morning market in my living area. It is very rare to find them on the market. This could be said to be quite fun for me. For some reason, these days I really like combining slightly sour ingredients in my cooking.
Very different from the time in the past when I only thought about food that only tasted savory and sweet. Then, I will ignore sour foods in the past. Well, at least now I enjoy enjoying sour foods because they are better for my health compared to sweet and salty foods.
I used to be afraid to eat green tomatoes. Especially as a salad because my family doesn't know salads from raw vegetables in their life. Thanks, HIVE. Thanks to the people at HIVE who love vegan food, I've learned a lot about delicious vegetable dishes even though I'm not completely vegan at the moment.
Glad, now I dare to try green tomatoes. Because I love stir-fried dishes, then I will make green tomatoes as stir-fried dishes. I combined it with a big eggplant which is seedless.
Anyway, this is the first time I bought this type of eggplant. Not a local type of eggplant. Even though it is more expensive than the local purple eggplant, I didn't mind cooking this type of eggplant for the first time in my life. Glad, it turns out the taste of this big eggplant is very delicious because it is seedless.
In fact, the one big eggplant fruit with 4 green tomatoes that I use can produce two meals for my husband and me. That means it can serve 4-5 people at one meal. I admit, it saves me quite a bit of time. I cook this combination dish for lunch, as well as dinner. Only, I added rice for my husband. And, baked sweet potato for me.
For spices and herbs, you can adjust it to your taste. The simplest, you only need to use garlic and salt. It will still be delicious. For me, there are other additions such as red chilies, coriander powder, and ground pepper because my tongue is used to spicy food.
THE INGREDIENTS
for 4 servings
- 4 green tomatoes
- 1 big eggplant
- 3 cloves of garlic, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- (optional) red chillies
- (optional) red onions
- (optional) chili powder
- (optional) coriander powder
COOKING INSTRUCTIONS
Cut the eggplant into pieces. Initially, I split the eggplant into two parts. Then, the two parts are divided again into two parts. Then cut vertically into two more parts. And, slice but not too thin.
Prepare a bowl filled with water with a tablespoon of salt. Then soak the slices of eggplant in the salt water. Minimum 5 minutes.
Cut green tomatoes. Don't be too small. Try to make the cut look like when you cut the bell pepper.
Heat vegetable oil. Here I use sunflower oil. Add garlic and red onion (if you are using red onion). Stir-fry them for a while until they smell good.
Add chilies and other spices and herbs. Cook until they look caramelized with oil.
In the final step, add tomatoes and eggplants. Keep stirring them. Add a few tablespoons of water to make it easier for them to cook evenly. I cooked them for about 5 minutes in a closed pan.
SERVING WAYS
Serve stir-fried green tomatoes and eggplant sprinkled with roasted sesame seeds to boost the taste. You can make this fresh side dish with rice or potatoes and sweet potatoes.
I'm very happy this time I know how to cook delicious green tomatoes. Of course in combination with other vegetables. Green tomatoes would also work great for chickpeas, tofu, or other proteins. Also, for pasta. You just need the courage to try something new.

This is something I definitely have to try, green tomatoes are delicious, that acid touch they have, make them unique, I have not seen a cooked preparation with them, I usually like to add them in salads, they taste great with cucumber and red onion.
If you are get used to eat raw in salad, then it is great and healthier 😊
In Indonesia, we get used to use red tomatoes for cooked veggies and I love to try new thing with these green tomatoes
Another way we use green tomatoes, and which is really delicious because of its acidity, is in raw vegetable sauces to use over grilled meats, something very similar to chimichurri, with garlic, onion, sweet chiles, paprika, a touch of cilantro, the green tomato, a little bit of cumin, salt, oil and vinegar to blend and it is really delicious.
I love this. It's a perfect way to use green tomatoes. I love the addition of the chilies and seasonings. Yum!
Yeah Because oil can add perfect taste to them. So we can use healthier oil for that way 😊

I have never cooked green tomatoes except to bread them and fry them. Not the healthiest way to cook them, but they do taste delish !

Yeah because raw salad is something new in family. But for sure I still learning to love eat it in raw. 😊
Is that another variety of tomato or it is just the unripe one? Coz you know when eating it, I want it only to be half cook so it is still slightly crunchy. And I really prefer this than the ripe one hehe. Just sharing.
Anyways, sourness in a dish is really good. With that, the dish will taste even more better and not too overpowering on it's flavor because the sourness can make it more balance.

We make green tomato as main dish to eat with chapati/patantha. It is sweet sour and spicy yummy!
