Delightful Overripe Banana Cakes
It would be very hard not to think of banana cakes when we have overripe bananas at home. So did I. The first thing I thought of when I had overripe bananas was to make super yummy and delightful banana cakes.
I was surprised when my husband brought home a lot of overripe bananas from my mother-in-law's house. My mother-in-law told me to turn all the overripe bananas into delicious foods. So, no overripe bananas were wasted.
My mother-in-law and my sisters-in-law love banana cakes. So, I will make banana cakes from those overripe bananas. I will also make traditional cakes later from the remaining bananas because I only need a few overripe bananas to make banana cakes.
This time I only need 4 overripe bananas. Actually, see that overripe bananas are not as bad as their outer appearance. Although the outer skin of those overripe bananas looks black but the inside of the bananas is still a good yellow. It is also possible that this is influenced by the type of banana I used so that it affects the durability of the inside of the banana flesh.
THE INGREDIENTS
- 4 overripe bananas or about 200-250 grams
- 120 grams of sugar
- 150 grams of all-purpose flour
- 3 eggs
- 1/2 tsp of SP
- 1/2 tsp of baking powder
- 1/2 tsp of baking soda
- 1/4 tsp of salt
- 1 tsp of vanilla
- 120 ml of vegetable oil
- Optional: 1/4 cup of chocolate chips
COOKING Instructions
PREPARE OVERRIPE BANANAS
PREPARE THE EGG DOUGH
ADD MASHED BANANAS
ADD FLOUR MIXTURE
ADD VEGETABLE OIL
ADD CHOCOCHIPS
PREPARE BAKING TRAY
BAKE CAKES
SERVING WAYS
Before serving, wait for the cakes to cool down to room temperature. Then you can start cutting them according to your taste.
Look, the cake that has just been removed from the baking tray looks like a banana blueberry filling. So beautiful. In the next picture, you will also see how messy my kitchen work table is! But that is the magic table where I work to present my cooking results.

For the presentation of these delightful cakes, I used sliced bananas and grapes. You can also serve them with fresh blueberries or strawberries. I also used something a little sour to balance the sweetness of the banana cakes.
Oh, this is sooooo good! I'm not lying; I even think the cake recipe I made this time is similar to banana cakes sold in expensive coffee shops!

I thought only green bananas can be used for banana cake and nowadays, I learned that "Cardava" bananas could be used for cake.😊

That banana cake looks so delicious. Myself I like banana bread. Looks like the same thing because it's in a loaf form. Thrifty way to use overripe fruit and allow it to go to waste. I love that you take items and repurpose them instead of throwing them away.
I've seen so much waste in my lifetime with family and friends who don't take time to reuse items. It pains me because in the U.S. people throw away so much food with their being so much hunger in the world.

It looks like a different kind of banana cake. Here in Brazil, the more traditional recipe is more popular.

When I have a lot of bananas that I harvest, I give them as gifts to my neighbours, I leave some for myself, to eat them fresh, and the others I freeze them. That way they keep better and I can use them for smoothies and whatever else comes up... which can be banana cake.
I love banana cake and with chocolate sprinkles, even more.
