I've canned beef and venison, but I never really thought about canning chicken. Now I'm going to have to shop around to see if I can get a good deal on some boneless chicken. That would be nice to have this winter.

Bone in chicken processes faster than de-boned does. Apparently the bone aids the heat penetration.

But low cost food of any kind is a good find these days!
