delicious coconut shrimp curry

hello everyone, back again with me on this occasion I want to make shrimp coconut curry, a few days ago my father harvested the shrimp in the pond, unfortunately the harvest was not good, but my father has been cultivating fish or shrimp for a long time since I was little, but in the past it was still with natural shrimp, but now my father has switched to vaname shrimp which has a short harvest period of about 3 months, but unfortunately my father often experiences a less than good harvest, but I see my father never gives up because this is his source of income
Hopefully in the future I will get good harvest news from my father, amen. After harvesting the shrimp, my father told me to take shrimp from the pond. My father gave me a lot of shrimp, about 5 kilos, because my father also asked me to share them with my in-laws. After returning from the pond, I cleaned the shrimp. The plan is that I will make shrimp coconut curry. This is our family's favorite side dish.
Ingredients for making shrimp coconut curry:
- 400ml thick coconut milk
- 300 grams of cleaned shrimp
ground spices:
- 6 cloves of red onion
- 4 cloves of garlic
- a piece of turmeric
- a piece of ginger
- 1 teaspoon of coriander
- 4 red chilies
- 5 cayenne peppers
- 2 tablespoons of roasted coconut
- 4 pieces of sunti acid
How to make:
(1) The first step is to marinate the shrimp with lemon juice and salt, then let it sit for about 5 minutes.
(2) After that, grind all the spices and then take a frying pan and sauté the aromatics first, including pandan leaves, curry leaves, cardamom, and star anise, sauté until slightly wilted.
(3) Then just add the ground spices, then add 400ml of fresh coconut milk and then also add 300 grams of shrimp that have been cleaned, stir until everything is mixed well.
(4) Cook for about 15 minutes then add a little salt. Cook while stirring so that the coconut milk doesn't split easily. After that, check the taste to see if it's right.
and tara, the shrimp coconut curry is ready to be served with warm rice and also additional menus. It tastes really delicious, very savory and sweet and creamy.
